Blueberry Buckle Coffee Cake

Tomorrow night I'm getting together with a few of the girls that I used to work with at the Foster Care agency. I'm quite looking forward to it. The girl who's home we will be at is making us dinner, I'm bringing dessert, and the other girl is bringing drinks. Oh, and I will be bringing Gabe...but obviously he won't be on the menu! He will just be his adorable, charming self. It should be fun.

I tried this coffee cake at Mom's Group a few weeks ago, and immediately asked for the recipe. I got it, and this will be the dessert I bring tomorrow night. And yes, its 10:50pm, and I just had to try out my creation. The verdict? Freakin' delicious!!!

Blueberry Buckle Coffee Cake

Batter
2 C. Flour
3/4 C. Sugar
2.5 Tsp Baking Powder
3/4 Tsp. Salt
1/4 C. Margarine
3/4 C. Milk**
1 Egg
2 C. Fresh or frozen Blueberries (or Mixed Berries)*

Mix flour, baking powder, & salt. Set aside
Mix margarine, sugar, milk & eggs
Add dry ingredients & beat for 30 seconds.
Carefully stir in fruit (try not to mash it).

Crumb Topping
1/2 C. Yellow Sugar (I used brown sugar, is that the same thing?)
1/3 C. Flour
1/4 C. Margarine
1/2 Tsp. Cinnamon
- Mix together until crumbly

Glaze
1/2 C. Sugar
1/4 Tsp. Vanilla
2 Tsp. Hot Water
-Mix to a drizzling consistency

*You can use frozen mixed berries (I used a Costco mix, including blueberries, raspberries, and blackberries). I thawed them in the microwave which turned my two cups into one cup, plus a lot of juice. So I added another half cup of fruit. I think I would use two cups thawed fruit next time, which probably works out to 3-4 cups of frozen fruit.

**Take the juice from the berries, and add milk until you get 3/4 of a Cup.

Spread batter in 13" x 9" pan. Lightly grease with cooking spray. Sprinkle with crumb topping. Place in a 375 degree oven. Bake for 28-30 minutes, or until toothpick comes out clean. Drizzle with glaze when warm.

PS. And I just had to add some pictures. Of course they don't fully get across the deliciousness of it all, but at least you get a bit of a visual. And also the evidence of our evening raid...

    I didn't realize you had a blog. I can't even remember how I found myself here. The few times you've posted at my place there wasn't a link.
    Anyway, glad I found you. That blueberry cake looks good. Say hi to Rob....and your kids are too cute!
