I wanted to share my quiche recipe with ya'll, but mainly my friend Lynn who I said I would pass it onto. This way I figure I can share it with not only Lynn, but also the rest of my blog friends. I hope you enjoy. I find the prep a bit tedious, but the results are delicious, and it is a consistent recipe. Time and time again its yummy. You can add all sorts of veggies, meat, cheeses. You name it. I buy my frozen pie shells at Safeway (deep dish), although I'm sure most stores have something along these lines. Or you could go all Martha on me and make your own pie shells. Geesh!
Quiche
Cooking For The Rushed Cookbook
1 Deep Dish Frozen Pie Shell
1/2 C. Cheddar Cheese, grated
5 large eggs
1/2 C. 1% milk
1 Small onion, diced
1/2 Small green pepper, diced
10 mushrooms, chopped
2 Tbsp. bacon bits
1 C. Cheddar Cheese, grated
- Take out pie crust, right before prepping ingredients to thaw at room temperature.
- Take pie crust out of tin and spray with oil. Put the crust back. (*Holly's tip, it sure helps!)
- Sprinkle 1/2 C. Cheddar Cheese into bottom of pie crust.






- Whip egg whites until frothy in a mixing bowl. Add yolks, milk and pepper (to taste). Mix together until well blended.
- Pour into crust over 1/2 C. of cheese.
- Saute onion, green pepper, and mushrooms for 1 minute (to soften).
- Add top pie crust in this order, sauteed veggies, bacon bits, and top with 1 C. Cheddar Cheese.
- Place in a 375 degree oven, and bake until golden brown and inserted knife comes clean. Around 50 minutes. (*Holly's tip, I always put a cookie sheet underneath in case it spills over. Learned this one the hard way!).

***This is my vain confession. I thought I was having a fairly "good bang day" hence the need for a picture. Because really, when you have bangs, its now all about the bangs. But now that I look at the picture I'm not so sure. Its bordering on a bowl cut kind of look. And perhaps to punish my vainness, the giant grin is because Rob is making fun of me for the entirety of this picture.
